Junior Sous Chef – Grill / Hot Kitchen

Employment Status: Full Time

REPORTS TO: Chef de Cuisine

Office Location: Rawai, Phuket


As the Junior Sous Chef for the Grill & hot section you will be responsible for the smooth operation of your section.

Junior Sous Chef Duties and Responsibilities:

  • Plan and direct food preparation with in the Grill & hot section
  • Estimate food requirements
  • Supervise, motivate and train junior staff
  • Ensuring proteins are portioned to the correct weight and stored correctly
  • Ensuring smooth operations during service
  • Cooking meats and fish to the correct core temperatures
  • Follow standard recipes to the highest standards
  • Maintain a positive and professional approach with coworkers
  • Positive can-do attitude
  • Complies with the Resorts food handling and sanitation standards
  • Ensures all equipment in your section is properly maintained and in working order, immediately report issues to the Executive Chef


Thai National with a strong background working in the hot and grill section. Expertise in cooking meats and fish is a must.


  • Experience working in a reputable Steak house or grill restaurant
  • Thais or Filipinos (Male or female) 20 – 35 years old
  • Ability to cook meats to the correct core temperature
  • Butchery skills and knowledge – Fish and Meats
  • Ability to work with open fire charcoal grill. Special consideration will be given to candidates with experience working with Josper ovens
  • Ability to spot and resolve problems efficiently
  • Capable of delegating multiple tasks
  • Communication skills
  • BS degree in Culinary science or related certificate. An advantage


  • Able to demonstrate proficient written and verbal communication in English. 
  • Proficiency with computers and computer programs, including Microsoft Word, Excel and Outlook. – An advantage
  • 3 Year Hospitality Management or equivalent Culinary university degree. – An advantage


  • With a minimum of two years experiences in a similar capacity / function in an international five star hotel or restaurant.
