Senior R&D Manager


  • Research and Development
    • Develop strategic and creative new products for multiple restaurant concepts.
    • Complete accurate food costing of ingredients for the products developed.
    • Work along-side multiple departments with all aspects of product roll-out including marketing, purchasing, Operation.
    • Lead product development ideations for individual brand tastings.
    • Develop and refine specifications for new and/or existing products.
    • Provide technical expertise for products in development, new or improvement of existing. Planning, execution, and evaluation of projects while maintaining food safety and regulatory requirements specific to the menu development.
    • Responsible for resolution of technical issues that arise during the development; production, operational, or performance based.
    • Work closely with Operations, Purchasing and Marketing in communication of technical information, related to new product test programs.
    • Nutritional analysis and calculations using ESHA Genesis nutrition software
  • Design and Conduct Training Program
    • Find or develop teaching aids, such as training handbooks, demonstration models, on the job training etc.
    • Create training courses and activities to both improve skills and provide knowledge on new products.
    • Conduct training regularly both in class and at stores.
    • Training program should include knife skills, cooking skills, food safety, SOPs, stock management, waste/loss records, shift management, COGS management, kitchen documentations, etc.
  • Evaluate Employees & Work with Other Departments to Follow Up
    • Test trainees to measure progress (before and after training) and evaluate effectiveness of training program.
    • Keep records of employee’s training and progress and make available to other departments.
    • Work with Operations, HR and other departments to follow up and improve upon those development needs.
    • Revise training program periodically to improve its effectiveness and incorporate new products and SOPs.
  • Other Duties
    • Motivate store kitchen employees which results in better service to our guests.
    • Maintain high standards of training and food safety.
    • Maintain high standards of appearance and personal hygiene.
    • Provide inputs as necessary for menu development.
    • Work with Operations to create checklists and procedures to control the food quality and food safety.
    • Assist own supervisors in kitchen training and other related tasks. 


    • Male or Female, Thai Nationality, Age 35-45 years old
    • Minimum 10 years experience in a restaurant chain
    • Good Command at English (reading, speaking, listening, and writing)
    • Basic knowledge of food production and processing; thorough knowledge of food safety standards, HAACP, and Serve Safe Certification; basic culinary knowledge related to equipment and technical skills
    • Must have thorough knowledge of food products, recipes and procedures writing, and food costing
    • Basic knowledge of ESHA Genesis nutrition bases computer software
    • Understanding of restaurant equipment and services
    • Keeping current with trends, consumer insights, and competitive restaurant/menu strategies
    • Requires independent, analytical and creative work efforts regarding proper procedures, planning and follow-up
    • Requires adaptability to handle multiple projects simultaneously while remaining an awareness of completion dates and understanding of management principles, especially of time management
    • Must have excellent written and verbal communication skills
    • Strong proficiency in Windows and Microsoft Office applications (Outlook, Excel, Word and PowerPoint)
